Pasta Primavera

Ingredients

  • 1 lb penne pasta
  • 4 T olive oil
  • 1 crown broccoli roughly chopped
  • 2 carrots julienned
  • 1 yellow bell pepper cubed
  • 1 cup cherry tomatoes halved
  • 1 lb sugar snap peas left whole
  • 2 cloves garlic minced
  • 4 T butter
  • 1 cup Parmesan cheese
  • 1 pinch red pepper flakes
  • 1 handful basil leaves

Instructions

  • Prepare pasta according to package instructions. Reserve one cup of pasta water and drain the rest. Set aside.
    In a large saute pan, heat the olive oil. Add all the chopped vegetables except the garlic and basil. Season with salt and pepper. Saute until almost tender.
    Add the butter and garlic and cook until butter is melted. Add the pasta, pasta water, red chili flake and more salt and pepper as desired. Cook until the water has evaporated.
    Top with Parmesan and basil.
